The Madison Hotel has been a part of the DC landscape since 1963, but instead of becoming outdated, the hotel has made an effort to stay current. The opening of Palette in January 2004 was an important part of that. The restaurant's modern vibe is a sharp contrast to the hotel's colonial style. Shielded behind frosted glass from curious passersby, Palette exudes chic style. Here, art meets haute cuisine in an attempt to satisfy all the senses. The focus of the food and decor centers on the Americas -- North, Central and South.

Monthly modern art exhibits pay homage to the countries that make up the Western Hemisphere, while the designer light fixtures, booths and bar stools make a statement all their own. Bartenders shake up creative cocktails with hefty price tags for a hip crowd, and the kitchen turns out cuisine that doubles as art on the plate. The contemporary menu changes frequently to reflect the freshest ingredients of the season.
